Utilize the Big Green Egg® to smoke chicken and add chipotle mayonnaise for the ultimate homemade sandwich.
Smoked Chicken Ingredients
3 Tablespoons of Brown Sugar
1 ½ Teaspoons of Dry Oregano
1 ½ Teaspoons of Onion Powder
1 ½ Teaspoons of Garlic Powder
1 ½ Teaspoons of Kosher Salt
1 Teaspoon of Ground Mustard
¼ Teaspoon of Ground Ginger
¼ Teaspoon of Chili Powder
¼ Teaspoon of Chipotle Powder
¼ Teaspoon of Paprika
6 Chicken Breasts
Smoking Instructions
Mix the spices and herbs together in a small bowl. When the mixture appears to be uniform, rub it into each chicken breast separately. Make sure that all sides of the meat are covered. Once this step is complete, let the chicken breasts marinate for at least two hours. To achieve a more pronounced flavor, allow the meat to remain covered in the fridge for up to 48-hours.
When it is time to make the scrumptious chicken sandwiches, smoke the chicken on the Big Green Egg® for 2-hours or until the chicken’s internal temperature reaches 165°F (74°C). After the chicken breasts are cooked to perfection, wrap each one in aluminum foil and wait at least 30 minutes before cutting them into sandwich size proportions.
Chipotle Mayonnaise Recipe
2 Cups of Mayonnaise
3 Finely Minced Chipotle Peppers in Adobo Sauce
1 ½ Tablespoons of Red Wine Vinegar
1 Teaspoon of Sugar
Kosher Salt to Preference
Place the ingredients together in a medium-size bowl. Whisk the mixture until combined. Store finished condiment in the refrigerator before serving.
Smoked Chicken Sandwich Garnishes
3 Thinly Sliced Heirloom Tomatoes
1 Head of Butter Leaf Lettuce, Leaves Reserved Only
2 Thinly Sliced Avocados
2 Cups of Packed Kale Micro Greens
24 Pieces of Bacon Cooked to Preference
1 Pound of Thinly Sliced Lean Ham
12 Fried Eggs Cooked to Preference
12 Slices of Mozzarella Cheese
12 Slices of Pepper Jack Cheese
12 Toasted Cobblestone Bread Co.™ Sesame Twist Buns
Finishing Touches
Open the toasted sesame twist buns. Spread a thin layer of chipotle mayonnaise on the inside of the top bun. Set aside.
Add the desired amount of ham, smoked chicken, and cheese onto the bottom bun. Melt this portion under a broiler. Place the sliced tomato, butter leaf lettuce, bacon, avocado, fried egg, and micro greens onto the top bun. Once the cheese has melted on the bottom bun, combine the top and bottom portions together for the ultimate sandwich. Repeat the process eleven times to share with family and friends.
